We're in a breakfast rutt. So today I'm breaking out an old favorite. The recipe we use is called Popover Pancake. But some call it Dutch pancake, or Dutch baby. Whatever you call it, it's delicious! We eat it as-is with a little confectioner's (which we call Perfectioner's) sugar.

6 eggs
1 cup flour
1 cup sugar
Pinch salt
1/4 cup melted butter

Preheat oven to 450 degrees. Whisk all ingredients together in a mixing bowl. There CAN be lumps. Pour into a sprayed cast iron skillet. Bake 20-30 minutes intil it looks like this.

I was out of the house for a few hours this morning. Look what I came home and found! The boys found a recipe for tea cakes online. They had a cup of lemon zinger and a tasty tea cake waiting for me. What great boys I have!

Making Room for Ice Cream

This week, the Big Dog was dealt a pretty hard blow.  It is the kind of change that will affect the rest of our  lives.  I was so sad for Big Dog and he is sad because he was treated poorly.  We took an afternoon to grieve and lick our wounds, and then began to plan for a new future as a family. It is still sad and hard for us to absorb.  We are reeling, just like someone would real from actually being punched.  We know God is faithful.  We know God is in this.  We know that.

Last night I was making supper and when I retrieved something from the freezer, I started to look at all the junk that had been in the freezer for years that I hadn't even touched in the last 6 months.  I began to clean.  I filled a garbage bag with old food and science experiments.  I re-organized.  Now our freezer is clean and de-cluttered.  I stood at the freezer with the door open gazing at the clean and clear shelves and I thought, "Oh look, now there's room for ice cream!"  And that's when the Lord spoke to my heart and said, "That's what I'm doing for the Big Dog. Making room for ice cream."  (He didn't say Big Dog.  He said his real first name.)

In our house, ice cream is a treat.  We don't always have ice cream in the house and usually we buy it when we want a special dessert or snack.  It's not a staple.  It's a luxury.

God is making room for ice cream in the Big Dog's life.  I am reminded of Genesis 50:20 (NIV)
You intended to harm me, but God intended it for good to accomplish what is now being done, the saving of many lives.
This blow that I mentioned was intended to send a message.  It was intended to hurt the Big Dog and our family.  But God has other plans.  He plans to give us a life better than we can imagine.  He plans only for our good.  His plans are about our growth.  And, yes, His plans are to give us ice cream.  God is all about the treats and desserts.  There have been so many times that I've prayed for a need only to receive more than I could ever ask for!

I always said that about our house.  When we looked for a house, we had no idea what we wanted, other than bedrooms and a bathroom!  But the house we bought 14 years ago has a fireplace and central air-conditioning.  Two things we didn't look for, but are so glad we have.  Psalm 37:4 (NIV)
Take delight in the Lord,and he will give you the desires of your heart.

I don't always delight myself in the Lord.  I get bogged down with life.  I get overwhelmed by trials.  I pull away from God.  But He knows my heart and He still gives me the desires of my heart.

And, you know, there are stories all over the bible to illustrate my point.  Ruth didn't know that Boaz was waiting for her when she left everyone she ever knew and followed Naomi to her home land.  Job didn't know that an even larger estate and family were going to be his life after suffering through so many trials.  Peter didn't know the tremendous ministry the Lord had in store for him when he experienced Jesus crucifixion and his rejection of Him.  I could go on and on.  But the bottom line is that sometimes the Lord does our house cleaning for us.  But it's never for no reason.    He always cleans our house to make room for even bigger, even better blessings.  Sometimes those blessings are in the form of a new ministry or a new family member.  Sometimes those blessings are new jobs or some other new opportunity.  Whatever the blessing coming your way, know that the Lord is in it.  He's not pruning just for the sake of pruning.  He is cleaning our freezers to make room for ice cream.

And so, I am shopping in the ice cream aisle for the next few months while we transition through a major change in our lives.  God is faithful.  I know this.  But, now, I also know that He purges things from our lives to make room for even better things.  He cleans our freezers to make room for ice cream.
