What the Mouse is Doing

Tonight, the Big Dog and the boys are on a field trip to Cabela's and then a sportsmen's banquet at a friend's church.  It's a bit of a drive from here, so they left in the middle of the afternoon and won't be home until late tonight.  I have the rare treat of an evening at home all by myself.  What do I do when I have an evening alone?  I'm glad you asked.  Tonight, I made a swiss cheese quiche based off Paula Dean's recipe here.  And Giada's Linguine with Avacado and Arugula Pesto.  It's deeeelicious, but not one of those meals the Big Dog would love.  Here's a pic:
I even put my soda in the freezer to get it icy cold and dropped a bit of fresh lime juice in it for flavor.  Refreshing.

After supper there's a batch of fresh rice pudding I simmered on the stove while the quiche was baking and a pot of fresh coffee.

Rice Pudding
1 cup rice
1 can sweetened condensed milk
milk
1/2 stick butter
cinnamon and nutmeg to taste

Put rice in a medium saucepan.  Cover with water and simmer until the water is mostly gone.  Then add the can of sweetened condensed milk.  Fill that can with regular milk and pour it into the saucepan.  Fill the can again with water and pour that into the saucepan. Put the butter on top in pats.  At this point you can sprinkle cinnamon and nutmeg on top of the mixture, but I don't always do that.  Cover the pan and put the mixture on low for at least an hour stirring every 10 minutes or so.  Usually it takes 10-15 minutes longer than an hour.  Keep it covered while it's cooking.

And after that, I'm casting on this chunky cowl for an evening project.
